Ingredients for 6 servings:
- 300 g flour
- 150 g sugar
- 1 bag of baking powder
- 1 bag of vanilla sugar
- 1 lemon(s), juice
- 150 g quark (low-fat quark)
- 1 egg(s)
- 1 ½ kg plum(s), pitted
- 125 g butter or margarine
- 2 tbsp almonds, flakes for sprinkling
Instructions

Whisk together the egg and quark. Add the lemon juice, sugar, vanilla sugar, and margarine/butter. Whisk until fluffy. Combine the flour and baking powder and stir into the batter. Pour the batter into a greased 26cm springform pan. Arrange the plums in a circle on top, so they sit in the batter. Sprinkle with flaked almonds and bake at 180-200°C (you’ll have to test this) for 50-60 minutes. The batter should be nicely browned, but the plums shouldn’t burn. Wipe off any excess juice, especially from the center, with a paper towel. The cake tastes almost better the next day, once it’s had a chance to set.
