Plum Flan

Ingredients for 4 servings:

  • 450 g plum(s), fresh
  • ½ tsp cinnamon
  • 115 g sugar
  • 1 lemon(s), zest
  • 1 tsp lemon juice
  • 2 large eggs
  • 3 tbsp sugar
  • 2 tbsp flour
  • 1 tsp vanilla extract
  • 4 tbsp cream
  • 3 tbsp cognac, rum or kirsch

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Clafoutis with plums

Preheat oven to 175°C. Wash, halve, and stone the plums, then place them skin-side down in a buttered dish. Sprinkle with cinnamon, sugar, lemon zest, and lemon juice. Bake on the middle rack of the oven for about 20 minutes, or until cooked through but still holding their shape. Set the oven to 190°C. Remove the plums and place them in another buttered dish, again skin-side down. Pour the resulting sauce into a small saucepan. Beat the eggs and sugar well with a hand mixer, then add the flour, vanilla extract, and cream and mix. Pour the mixture over the plums. Bake in the upper third of the preheated oven for 20-30 minutes, until the cream has puffed up slightly and is nicely browned. While the dessert is baking, combine the sauce with the cognac, rum, or kirsch in a small saucepan and heat through. Serve servings individually and pour the warm sauce over the top. Whipped cream is also suitable for this.
