Ingredients for 4 servings:
- 500 g plum(s)
- 125 g shallot(s)
- 1 garlic clove(s)
- 1 pinch of ginger powder
- 1 m.-sized orange(s), untreated
- 1 chili pepper(s), red
- 4 tbsp red wine
- 2 tbsp vinegar (red wine vinegar)
- 70 g brown sugar
- some nutmeg
- some cinnamon
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Wash, stone, and halve the plums. Finely chop the shallots and garlic. Peel the orange thinly, then briefly blanch the peel in hot water. Juice the orange. Wash and deseed the chili pepper. Place all ingredients in a saucepan, season, cover, and simmer over low heat for 15 minutes. Remove the lid and simmer for another 30 minutes. Remove from the heat, let cool slightly, then place in a blender and puree. Return to the saucepan and simmer for another 5 minutes. Let cool. Adjust seasoning if desired. Tastes best with pork and poultry.
