Ingredients for 1 servings:

  • 600 g plums
  • 200 ml balsamic vinegar, lighter
  • 100 g mustard seeds
  • 6 allspice berries
  • 1 tsp black peppercorns
  • 4 tbsp sugar
  • 1 tsp salt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Pit the plums and bring to a boil with the balsamic vinegar in a pan or large saucepan. Simmer over medium heat for about 15 minutes. Then puree. Finely grind the mustard, allspice, and peppercorns, add the salt and sugar. Stir continuously and let thicken for about 10-15 minutes. While still hot, pour into clean jars, seal immediately, and let cool. This quantity makes about 4-6 small jars of mustard.
