Plum parfait with cinnamon

Ingredients for 4 servings:

  • 130 g plum(s) or damsons from the jar or fresh
  • 1 egg white
  • 1 egg yolk
  • 20 g powdered sugar
  • 100 ml cream
  • 1 tsp, heaped cinnamon powder

Instructions

Working time approx. 15 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 15 minutes

Puree the plums from the jar. If you like, you can then pass them through a sieve, but this isn’t necessary. Whisk one egg yolk and the powdered sugar until creamy, then whisk the cream until stiff. Mix the plum jam with the sugar and egg yolk. Whisk the egg whites until stiff and fold them into the mixture along with the cream. Season with cinnamon to taste. Then refrigerate for at least 4 hours. Serve beautifully decorated.
