always a pleasure

First, knead the flour, powdered sugar, softened butter, and egg into a smooth dough, wrap in cling film, and chill for about 30 minutes. Then knead the dough again on a floured surface and roll it out into a 30-32 cm tart tin. Prick the dough several times with a fork, and chill again. In the meantime, wash, pit, and quarter the plums. Dust the tart base with breadcrumbs and place the plums tightly together in the tin. Bake the tart in a preheated oven (175°C for an electric oven, 150°C for a fan oven, and gas mark 2) for about 25 minutes, depending on the type of oven. Heat the apricot jam, strain it through a sieve, brush it over the plums, and bake for another 5 minutes. Let the tart cool in the tin and sprinkle with powdered sugar before serving.
