Tomato consommé

Ingredients for 4 servings:

  • 1 kg tomatoes, sun-ripened
  • 1 garlic clove(s)
  • 5 basil leaves
  • 1 tsp sea salt
  • Pepper, freshly ground
  • 1 tsp sugar
  • 1 tbsp white wine vinegar
  • 4 tbsp cream, whipped

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 25 minutes

Rinse the tomatoes with hot water, remove the stems, and first chop into large pieces, then puree them finely with a hand blender. Peel and slice the garlic. Rinse the basil. Bring the tomatoes, garlic, basil, salt, pepper, sugar, and vinegar to a boil in a large saucepan. Simmer over medium heat for about 10 minutes. Line a sieve with cheesecloth and place it over a saucepan. Drain the cooked tomatoes and let them drain for about 1 hour. Then return the consommé to the heat and reduce slightly. Garnish each serving with whipped cream and basil leaves, if desired.
