Plums in red wine

Ingredients for 1 servings:

  • 2 kg plums, pitted and halved
  • 750 g sugar
  • 1 liter red wine
  • 250 ml rum, brown
  • 1 stalk(s) cinnamon
  • 1 piece(s) star anise
  • 1 slice(s) ginger, fresh

Instructions

Working time approx. 30 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 30 minutes

‘Red wine plums’

Pit and halve the plums, sprinkle with sugar, and cover in a large bowl. Heat the red wine with the rum and spices and simmer gently for about 15 minutes. Pour the liquid into the steeped plums, stir, and let stand for about 10 minutes. Do not boil again. Then immediately transfer to prepared screw-top jars while still hot. The red wine plums keep well. A sophisticated, unusual accompaniment to game or beef, delicious with pastries or vanilla ice cream.
