Poached cod with dill sauce and tagliatelle

Ingredients for 2 servings:

  • 2 cod loins
  • ½ organic lemon(s), juice
  • 1 tbsp flour
  • 1 bunch of dill
  • 100 ml cream
  • 200 ml water
  • 1 tbsp butter
  • Salt and pepper, white from the mill
  • 250g tagliatelle

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Drizzle the cod fillets with lemon juice and season with salt and white pepper. Cook the pasta al dente according to the package instructions. Melt the butter in a saucepan, add the flour, and simmer over low heat to make a light roux. While stirring constantly, add the water. Add the cream and season with lemon juice, salt, and pepper. Add the cod fillets to the sauce and poach for 6 minutes, turning after 3 minutes. Wash the dill, shake dry, and finely chop. Add the dill to the sauce, let it simmer briefly, season again, and arrange the fish, sauce, and pasta on two plates and serve.
