Ingredients for 4 servings:
- 500 g flour
- 2 eggs
- 2 tbsp, levelled sugar
- 200 ml sour cream
- 200 ml milk
- 1 packet of baking powder
- 1 pinch of salt
- oil
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
Polish pancakes
Whisk the eggs with the sugar and add the sour cream. Add the baking powder to the flour and mix with the egg mixture. Gradually add the milk while stirring until the desired consistency is reached. The thicker the batter, the larger the racuchy you will get and the harder they will be to fry completely. Add the salt. Heat a pan with plenty of oil and set it over medium heat. Add the racuchy portions, about 1 heaped tablespoon of batter, to the pan. They should be half submerged in the oil. When the batter forms bubbles on top, turn them over. When the batter is fully cooked, which you can check with a toothpick, remove it and let the fat drain on crepe paper.
