East Prussian Quark Pancakes

Ingredients for 2 servings:

  • 80 g butter
  • 40 g sugar
  • ½ lemon(s), grated peel, or 1 lemon zest
  • 3 eggs
  • 500 g quark, 20% fat content
  • 150 g flour
  • 1 shot of mineral water
  • 125 g raisins
  • Fat or oil for frying

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

very tasty with cherry compote or fruit salad

Cream the butter, sugar, and lemon juice until fluffy, then gradually add the eggs and beat until smooth. Stir in the quark, flour, and a little water. Fold in the raisins. Fry about 2 tablespoons of batter in a pan with fat or oil until golden brown. These pancakes go well with red fruit compote, cherry compote, or fruit salad. If you like, you can omit the raisins; we tend to stick less closely to the recipe and add a few more.
