Ingredients for 1 servings:
- 5 pomegranates
- 1 vanilla pod(s)
- 600 g sugar (a little more or less depending on the amount of juice)

Syrup made from fresh pomegranates
First, you have to extract the juice from the pomegranates. I carefully removed the seeds, then heated them, mashed them as thoroughly as I could to open the seeds, and strained the juice. I squeezed the rest in small portions through a kitchen towel. This is very laborious; next time I’ll try squeezing the fruit with a citrus juicer. It yielded about 600 ml of juice. Now add the vanilla pod and the same amount of sugar, corresponding to the amount of juice, to the juice. In my case, it was 600 ml of juice, so I added 600 g of sugar. Finally, bring everything to a boil and then bottle it while it’s still hot. The syrup is great for adding to sparkling wine or as a garnish for dessert. You should also be able to buy ready-made pure pomegranate juice. That might be an alternative to save time and all the mess.
