Pomelo salad with carrots and mint

Ingredients for 1 servings:

  • ½ pomelo(s)
  • 1 orange(s)
  • 1 carrot(s)
  • 1 spring onion(s)
  • 1 handful of mint
  • 1 tbsp sugar
  • ½ lime(s)
  • 1 handful of cashews

First, cut off the top of the pomelo, peel the flesh, and cut it into small, bite-sized pieces. Peel the orange and cut it into small pieces. Peel the carrot and grate it into fine strips. Wash the spring onion and mint thoroughly and chop them finely. Mix all ingredients together in a bowl. Squeeze the juice of half a lime, mix it with 1 tablespoon of sugar, and drizzle it over the pomelo salad. Mix the salad again and let it sit for at least half an hour before eating. Fill the hollowed-out pomelo with the salad and serve with roasted cashews.
