Poppy seed muffins

Ingredients for 1 servings:

  • 300 ml fruit juice as desired
  • 3 cl rum
  • 200 g poppy seeds, ground
  • some salt
  • some clove powder
  • some cinnamon powder
  • 2 tbsp jam
  • 2 tbsp sugar or erythritol
  • n. B. Vanilla flavor
  • 250 g flour
  • 60 g sugar, if you want to save calories you can replace a maximum of half of the sugar with xylitol.
  • 1 tsp vanilla sugar
  • 15 g baking powder
  • 1 pinch of salt
  • 3 tbsp applesauce or freshly grated apple
  • 80 ml oil, neutral
  • 150 ml water or fruit juice as desired

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

First, combine all the ingredients for the filling in a bowl and mix. Set aside and let it rest. Combine all the ingredients for the batter in a bowl and mix with a spoon. Divide the batter among the muffin cups. Spoon 2 tablespoons of the filling into each cup. Bake at 160°C for 30-35 minutes. This batter makes about 12 muffins.
