Poppy seed rolls

Ingredients for 12 servings:

  • 200 g flour, pinch of salt
  • 100 g butter
  • 20 g sugar
  • 10 g yeast
  • 2 egg yolks
  • 3 tbsp milk, cold
  • ⅛ liter milk
  • 120 g poppy seeds
  • 30 g sugar
  • 1 tbsp honey
  • 20 g butter
  • Lemon(s) peel
  • Cinnamon

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Crumble the flour and butter, mix the yeast with 3 tablespoons of cold milk, mix both with the egg yolk (or 1 egg), sugar, and salt to form a dough. Cover and let rest for 1/2 hour. Boil the ground poppy seeds in the sweetened milk, mix with the remaining ingredients, and let cool. Cut the thinly rolled out dough into rectangles approximately 7×10 cm, place the filling on top, roll up, and fold in the ends. Place the rolls on a baking sheet and brush with the egg yolk. Let dry, then let rise for another 15 minutes until golden brown. Bake at approximately 180 degrees.
