Pork Belly Adobo

Ingredients for 4 servings:

  • 1.2 kg pork belly
  • 5 tbsp apple cider vinegar
  • 2 tbsp sugar
  • 4 tbsp soy sauce, dark
  • 4 tbsp Soy sauce, light
  • 4 garlic cloves
  • 4 bay leaves
  • 400 ml water

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 1 hour 45 minutes; Total time approx. 5 hours 5 minutes

Cut the meat into approximately 3 cm cubes. Mix the vinegar, sugar, soy sauce, garlic, and bay leaves to make a marinade and marinate the meat for at least 3 hours. Remove the meat from the marinade and sear it on all sides in a large pot. Once the meat is nicely browned, add the marinade and top up with water. Cover and simmer over low heat for about 1.5 hours. Remove the lid for the last half hour to allow the sauce to reduce. Serve with rice as a side dish.
