Ingredients for 4 servings:
- 500 g pork fillet(s)
- 1 lime(s)
- 3 tbsp soy sauce
- 1 tbsp brown sugar
- 2 cloves garlic
- 2 stalk(s) leeks
- 1 large mango(s), not quite ripe
- 6 tbsp oil
- 1 tbsp curry powder, hot
- 1 tbsp coriander, ground
- 125 ml meat broth
- Salt and pepper, black

Fruity curry from the wok
Cut the fillets into thin slices. Wash the lime in hot water, dry it. Finely grate the zest, and squeeze out the juice. Mix both with soy sauce and sugar. Peel the garlic cloves and press them in. Toss the meat in the mixture, cover and marinate for 1 hour. Trim and wash the leek, then cut diagonally into 0.5 cm thick slices. Peel the mango, remove the flesh from the stone, and dice it. Drain the meat well, reserving the marinade. Heat 4 tablespoons of oil in a wok. Brown the meat in batches for 1-2 minutes. Remove from the pan. Heat the remaining oil in the wok, stir-fry the curry and coriander for 1 minute. Add the leek and stir-fry for 3 minutes. Pour in the marinade and stock, bring to a boil, and cook the leek for 2 minutes. Stir in the meat and mango. Let everything simmer over medium heat for another minute, season with salt and pepper. Basmati rice goes well with this dish.
