Pork fillet in a sage and ham coat

Ingredients for 2 servings:

  • 4 slice(s) pork fillet(s) , from the loin
  • 4 slices of ham (San Daniele)
  • 16 sage leaves
  • 150 ml sweet cream
  • 4 tbsp mustard (coarse Dijon)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Flatten the pork fillets. Spread half a teaspoon of coarse mustard on the top of each slice and press in two whole sage leaves. Spread the four slices of San Daniele ham and place the fillets upside down in the center. Brush the untreated tops with the remaining mustard and press in two more sage leaves. Simply fold the ham over the fillets and sear them in the pan for four minutes on each side. Briefly remove the fillets from the pan, deglaze with cream, stir, and add the fillets back in. C’est tout! Tastes just as good with white bread as it does with baked potatoes or pasta.
