Crispy Parmesan Schnitzel

Ingredients for 3 servings:

  • 6 pieces of pork, pork loin steaks, thinly sliced
  • 6 tbsp flour
  • 3 eggs
  • 100 g Parmesan, grated
  • 250 g breadcrumbs
  • Salt
  • pepper
  • olive oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Season the pork loin steaks with salt and pepper. Prepare three soup bowls. Pour the flour into the first, the breadcrumbs into the second, and in the third, whisk the eggs and stir in the Parmesan cheese. Season well with salt and pepper. Coat the seasoned steaks first in flour, then in the egg and Parmesan mixture, and finally in the breadcrumbs. Let the breaded schnitzels rest for about 10 minutes, allowing the coating to set. Then, fry the prepared schnitzels in a pan with hot olive oil until crispy on both sides. I serve this with spaghetti and a light tomato and basil sauce or simply with a fresh salad.
