Pork fillet in apple sauce with onion and potato mash

Ingredients for 4 servings:

  • 450 g pork fillet(s)
  • 1 kg potatoes, peeled
  • salt water
  • 400 ml milk (1.5%)
  • 5 large apples, sour (e.g. Braeburn)
  • 2 large onions
  • 2 tbsp fried onions
  • 2 tbsp mixed herbs, fresh or frozen
  • 1 ½ tsp vegetable oil
  • 2 ½ tsp mustard, medium hot
  • 150 ml apple juice
  • 200 ml vegetable stock
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Boil the potatoes in salted water, mash them, and mix with milk. Mix in the fried onions and herbs, season with salt, and keep warm. Dice the apples and onions. Heat the oil in a non-stick pan and fry both for about 5 minutes. Stir in the mustard and deglaze with the apple juice and stock. Season with salt and pepper and simmer slightly. Cut the pork fillet into 1 cm thick slices, season with salt and pepper, and add to the sauce. Close the lid and let it cook for about 10-15 minutes. Arrange the mashed potatoes in the center of the plate, pour the apple sauce around it, and place the pork fillet on top of the mashed potatoes.
