Pork fillet in Gorgonzola sauce

Ingredients for 4 servings:

  • 800 g pork fillet(s)
  • 3 points bacon
  • 250g Gorgonzola
  • 4 cups of crème fraîche with garlic
  • Fat

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Wash the pork fillet, pat dry, and cut into approximately 3 cm thick slices. Wrap each slice with a slice of bacon and secure it. Place the medallions, not too tightly, in a greased baking dish and roast in the oven at approximately 200°C for about 15 minutes. Then place a piece of Gorgonzola on each piece of meat and top with a tablespoon of garlic crème fraîche. Add any remaining cheese or garlic cream to the baking dish. Bake for another 15 minutes, or until the cheese and crème fraîche form a sauce. Serve with green pasta or fresh baguette, plenty of vegetables or salad, and a cool rosé.
