Pork fillet in herb cream cheese

Ingredients for 4 servings:

  • 2 pork fillets
  • 600 g cream cheese with herbs (Mireille or Bressot light)
  • Cheese (Gouda), grated
  • Salt
  • pepper
  • olive oil
  • Baguette(s)
  • lettuce

Instructions

Clean the pork fillet and cut into thumb-thick slices. Season with salt and pepper on both sides. Heat the pan with a little olive oil. Briefly sear the fillet slices. In an ovenproof dish, add half of the cream cheese and spread evenly, then add the fillet slices and cover with the remaining cream cheese. If you like, add Gouda cheese on top. I usually mix it with Pecorino or Parmesan and then add it to the gratin. Bake in the oven for about 20 minutes at 220°C. TIP: To distribute the cheese evenly, I place the pans in the microwave and rotate them (without the metal lid) for 1 minute. This makes the cheese quite liquid and easier to spread.
