Pork fillet topped with apricots and cheese

Ingredients for 4 servings:

  • 800 g pork fillet(s)
  • 1 pinch(s) of salt and pepper
  • 2 tbsp oil
  • 1 can apricot(s)
  • 400 g crème fraîche
  • 1 tbsp curry powder
  • 3 handfuls of cheese, grated, to taste, e.g. Gouda

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Cut the pork fillet into medallions approximately 2 cm thick. Brown in a pan with oil and season with pepper and salt. Then place in a baking dish. Remove the apricots from the can and halve them if you haven’t already. Distribute them over the pork fillet pieces in the baking dish. Heat the apricot juice in the pan and stir in the crème fraîche. Season with curry and stir in a handful of cheese. Pour the sauce into the baking dish and sprinkle with the remaining cheese. Bake in an oven preheated to 200°C (top/bottom heat) for about 15-20 minutes on the middle rack. Serve with spaetzle, rice, or pasta.
