Ingredients for 4 servings:
- 700 g pork fillet(s), cut into 8 slices
- 3 tbsp pesto (from the jar)
- 4 tbsp basil, chopped
- 2 cans of tomatoes, chopped, 400 g each
- 500 g zucchini, small, coarsely grated
- 100 g sweet cream
- Salt and pepper, freshly ground black
- 2 balls of mozzarella, sliced
- Oil, for frying
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Briefly sear the fillet in hot oil on both sides, season with salt and pepper, place in a dish, and spread with the pesto. Mix the tomatoes with basil, zucchini, and cream, season well with salt and pepper, and pour over the fillet. Spread the mozzarella over the meat and bake in the preheated oven for about 20 minutes.
