Pork fillet with cheese and herb crust

Ingredients for 4 servings:

  • 600 g pork fillet(s)
  • 1 slice(s) of toast
  • 1 tbsp breadcrumbs
  • 1 tbsp mixed herbs, finely chopped
  • 1 tsp mustard
  • 1 egg yolk
  • 150 g cheese, grated
  • salt and pepper
  • some oil, if necessary

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Season the meat with a pinch of salt and pepper. Brown it all over in a pan. For the cheese and herb crust, finely crumble the toast, mix it with the breadcrumbs, cheese, herbs, mustard, and egg yolk, and season with salt and pepper. Add a little more oil, if desired. Brush the cooled meat with the mixture and press it down firmly. Bake in an oven preheated to 225°C for about 15 minutes.
