Pork fillet with Gorgonzola sauce

Ingredients for 4 servings:

  • 800 g pork fillet(s)
  • 2 tbsp oil
  • ¼ liter dry white wine
  • 300 g crème fraîche
  • 100g Gorgonzola

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Sear the fillet with salt and pepper. Continue searing at low heat for about 10 minutes. Wrap the fillet in aluminum foil and let it rest in the oven at about 100°C. Boil the pan juices with white wine, stir in the crème fraîche, and reduce over medium heat. Then add the coarsely chopped Gorgonzola, unwrap the fillet, add the pan juices to the sauce, and stir well. Slice the fillet and serve with the sauce. This dish goes perfectly with tagliatelle and peas tossed in butter with parsley.
