from the wok

Crush the garlic cloves, finely grate the ginger, and mix both with 1-2 tablespoons of chili sauce. Thinly slice the meat and marinate for about 1 hour. Finely slice the shallots and cut the spring onions into 1 cm long pieces. Cut the bell peppers into thin strips. Brown the meat and marinade in hot oil, stirring until cooked through, then remove from the wok. Add the onions and shallots to the wok and stir-fry. Gradually add the bell peppers and beans, and cook until the vegetables are tender. Return the meat to the pan and season with the remaining chili sauce and salt. If you like it spicier, you can add more sambal oelek. This dish tastes great with rice, but noodles or potatoes are also good.
