Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes
Preheat the oven to 200°C (top/bottom heat). Season the pork fillet with salt and pepper and spread with a little mustard. Lay the bacon slices side by side, overlapping slightly, place the fillet on top and wrap them in bacon. Seam-side down, then sear on all sides, then place in a casserole dish. Briefly fry the onions, add the mushrooms and fry, then dust with flour and sauté, then deglaze with the white wine. Let it simmer slightly, then add the cream, water, and cream cheese. Season with salt, pepper, a little chili, the herb mixture, and the vegetable stock. Bring to a boil briefly, season to taste, and then pour the mixture over the fillet in the casserole dish. Bake the dish for 20 minutes at 200°C. Remove the meat, wrap it in aluminum foil, and let it rest for another 5 minutes. Serve with spaetzle, noodles, or rice.
