Ingredients for 4 servings:

  • 400 g onion(s)
  • 1 tbsp butter
  • 1 tbsp vinegar
  • 200 g crème fraîche
  • 4 tsp mustard
  • 500 g pork fillet(s)
  • 8 slices of bacon
  • salt and pepper
  • Sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the onions and slice them into thin rings. Sauté them in melted butter until translucent. Deglaze with vinegar and simmer until the liquid has evaporated. Stir in the crème fraîche and mustard, and season with salt, pepper, and sugar. Cut the pork fillet into slices (not too thin!), season as desired, and wrap them in the bacon. Place these slices in a baking dish and cover with the onion and mustard sauce. Bake in a preheated oven at 200°C for about 45 minutes. Serve hot.
