Pork medallion with thyme crust

Ingredients for 2 servings:

  • 1 bunch of thyme
  • 80 g herb butter
  • 5 tbsp breadcrumbs
  • Salt
  • pepper
  • 1 tbsp oil
  • 300 g pork fillet(s) (medallions)
  • 1 baguette(s)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Finely chop the thyme, reserving some for garnish. Knead the herb butter with the breadcrumbs and chopped thyme. Season the medallions with salt and pepper. Heat the oil in a pan, fry the medallions for 2 minutes on each side, then place them in an ovenproof dish. Spread the breadcrumbs and herb mixture over the medallions. Bake in a preheated oven at 175°C (convection oven) for about 10 minutes. Add the baguette to the oven (after about 2 minutes). Garnish with thyme and serve with the baguette.
