Pork on Vegetables with Potatoes in Garlic Butter

  • 900 g Potatoes
  • Oil
  • Chopped garlic chives
  • 3 Pork fillets
  • Salt, pepper, sweet paprika powder
  • 1 Red onion in thin rings
  • 3 Roughly diced carrots
  • 0,75 Paprika in fine strips
  • 225 g Broccoli florets
  • 1 tsp Vegetable broth
  • 1 tbsp Lemon juice
  • 3 tbsp Margarine
  1. Boil potatoes. Season the fillet with pepper, salt and paprika powder. Cook broccoli in a little broth (1 teaspoon vegetable broth) for about 3 minutes. Fry the onion, carrot and bell pepper in oil. Fold in the broccoli with a little 4 tbsp stock, continue frying. Season the vegetables with salt, pepper and lemon juice, keep warm. Peel the potatoes, quarter them lengthways. Heat the margarine and chives and toss the potatoes in them. Fry the pork fillets in the oil on both sides. Arrange on the vegetables. Serve with the potatoes.
