Pork rinds in artificial casings or stomachs are cut into 1 cm thick slices using a food slicer, and then cut into 1 cm thick sticks using a knife (like thinner fries). The onion is sliced ​​into rings using a V-slicer (red onions improve the appearance). Then the pork rinds are dressed with vinegar and oil, and the onion rings are tossed in. A little more pepper may be needed, depending on the seasoning of the pork rinds. A rustic, delicious sausage salad with bread or roasted potatoes.
