Ingredients for 4 servings:
- 1 tbsp white sesame seeds
- 500 g spinach, fresh
- 2 cloves garlic, thinly sliced
- 3 spring onions, chopped
- ½ tsp cayenne pepper
- 300 g pork schnitzel, alternatively fillet, cut into thin strips
- 2 tbsp oil
- 2 tsp sesame oil, dark
- 2 tbsp soy sauce, Japanese
- 2 tsp sugar

Toast the sesame seeds in a small non-stick pan until golden brown, swirling the pan gently. Remove the sesame seeds from the pan and set aside. Clean the spinach, trimming the stalks. Wash the leaves thoroughly and spin them dry; this works best with a salad spinner. Then roughly chop the leaves. Mix the garlic, spring onions, cayenne pepper, and meat together well. Heat the oil in a wok and fry the meat in batches over very high heat until golden brown. Remove the meat from the wok and set aside. Add the soy sauce, sugar, and spinach to the wok. Mix gently, cover, and cook for 2 minutes, until the spinach is tender. Add the meat to the spinach and fold in. Sprinkle sesame seeds over the dish. Best served with rice.
