Porridge with egg, almonds and apples

Ingredients for 2 servings:

  • 70 g oat flakes
  • 400 ml water
  • ½ tsp salt
  • 3 eggs
  • 1 tsp coconut oil
  • 1 small apple, with peel, chopped
  • 50 g almonds, whole or sliced
  • ½ tsp cinnamon
  • ½ tsp cardamom
  • ½ tsp honey

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

high-protein, high-fiber breakfast

Boil the oats, water, and salt in a pan and stir well. If the porridge becomes too thick, you can always thin it with a little milk or water. Remove the pan from the heat and crack the eggs into the pan while the oats are still hot. Stir until the mixture becomes creamy. Heat the coconut oil in another pan and add the chopped apple and almonds. Season with cinnamon and cardamom and drizzle with honey. Cook for 2-3 minutes, stirring until the apples are soft. Serve garnished with the apples and almonds. Nutritional information: 22 g protein, 44 g carbohydrates, 24 g fat, 460 kcal per serving.
