Portuguese biscuit cake – no baking

Ingredients for 1 servings:

  • 1 cup butter, soft
  • 1 cup powdered sugar
  • 1 egg(s)
  • ½ pack of biscuits, butter biscuits (preferably round)
  • 1 cup of coffee
  • Icing sugar, cocoa powder or caramel sauce for decoration

Working time approx. 30 minutes; Total time approx. 30 minutes

Bolo de bolacha – a popular dessert from Portugal

Beat the butter and powdered sugar until creamy. Add the egg and beat briefly again. Pour the coffee into a bowl. Dip the cookies briefly in the mixture one at a time and place them in a springform pan until the bottom is covered. Spread a thin layer of buttercream over the cookies. Continue with the remaining cookie layers until all the cookies and cream are used up. The cookies should then complete the last layer. Decorate the cake as desired and refrigerate until ready to serve. The cake tastes especially delicious when covered with caramel sauce. You can also dust the cake with cocoa powder or powdered sugar. This cake is a very popular dessert in Portugal. You can of course also serve the cake with coffee. It is quick and easy to make and will keep in the fridge for several days.
