Potato and carrot mash with leek vegetables

Ingredients for 4 servings:

  • 1 kg potatoes
  • 2 carrots
  • 2 stalk(s) leeks
  • ¼ liter of milk
  • butter
  • Salt
  • nutmeg

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Peel the potatoes and carrots, cut into chunks, and cook until tender. Drain the cooking water and mash the ingredients. I personally like it when there are still small chunks left in the mixture. Add about 60g of butter and let it melt. Add enough milk until the desired consistency is reached. Season with salt and nutmeg. I like to add a dash of linseed oil or a teaspoon of mustard. Trim the leek, cut it into rings, and cook until al dente. Add a little butter. Alternatively, you can braise the leek in a pan with oil or butter.
