Ingredients for 4 servings:
- 500 g chicken breast
- 300 g potatoes, new
- 200g bacon
- 200 ml vegetable stock
- 200 g cheese
- 4 spring onions
- 5 tbsp spice mix of your choice
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes
I used my large cast iron pan to braise it on the grill.
Boil the new potatoes without peeling them. Bring the grill up to temperature and place the grill rack on top so you can place the pan on it. Now line the pan with the bacon to act as a heat shield and protect all the other ingredients from burning. Cut the chicken breast into small pieces and season with the seasoning. Slice the pre-cooked potatoes. Add everything to the pan on top of the bacon, pour in the stock, and scatter the cheese on top. Close the grill lid for 30 minutes (check after 15 minutes). During this time, slice the spring onions into rings. When all the stock has evaporated, remove the pan and scatter only the onion rings on top.
