simple and very tasty
Peel and roughly chop the onions and garlic, roughly chop the mushrooms, and blend everything in a blender with 2-3 tablespoons of BBQ sauce to form a paste. Cut open the fillet and flatten it to create a large surface for coating and filling. Season both sides of the fillet with salt and pepper. Spread the mushroom mixture over the fillet and scatter the grated cheese on top. Roll everything up, applying light pressure, and tie with butcher’s twine. Grill the roll on the preheated grill on all sides, brushing occasionally with the remaining BBQ sauce. Once the fillet has browned evenly on all sides, place it in the indirect heating area and let it cook. In my case, I let it cook until the internal temperature reached 74°C.
