Potato and matjes casserole

Ingredients for 6 servings:

  • 2 kg jacket potatoes (cooked the day before)
  • 6 onions
  • 200 g bacon, streaky
  • 12 herring fillets
  • 2 bunches of dill
  • 4 tbsp oil
  • Salt
  • pepper
  • 500 ml whipped cream
  • Fat for the mold

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 30 minutes

Peel and slice the potatoes. Peel and finely dice the onions. Dice the bacon. Cut the herring fillets crosswise into strips. Rinse the dill, pat dry, and finely chop. Heat oil in a pan. Sauté the bacon and onions until translucent. Grease a large, ovenproof dish. Place half of the potatoes and onion mixture into the dish, scatter the herring strips over the top, and sprinkle with dill. Add the remaining potatoes and the rest of the onion mixture, and season lightly with salt and pepper. Pour the cream over the casserole. Bake in a preheated oven at 200°C for about 45 minutes. Serve hot.
