Potato and onion pancakes with salmon

Ingredients for 2 servings:

  • 400 g potatoes, mainly waxy
  • 1 small egg(s)
  • ½ tbsp flour
  • salt and pepper
  • 1 m.-sized onion(s)
  • 4 slices of gravlax or smoked salmon
  • 50 g sour cream
  • 2 sprigs of dill
  • Vegetable oil, for frying

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Peel, wash, and finely grate the potatoes. Mix with the egg, flour, salt, and pepper. Peel and halve the onion, slice it crosswise into thin strips, and mix in. Heat 2-3 tablespoons of oil in a pan. Add 1 heaped tablespoon of batter to each pancake and spread it evenly into a thin, round flatbread. Fry for 4-5 minutes on each side until crispy brown. Serve the pancakes garnished with 2 slices of salmon, a dollop of sour cream, and dill sprigs.
