Ingredients for 4 servings:
- 10 m.-sized potatoes
- 1 tbsp peppermint
- Salt
- Nutmeg blossom
- Palm fat
- Apple compote or apricot compote
Instructions
Working time approx. 50 minutes; Total time approx. 50 minutes
Grate the potatoes and press the liquid over a second bowl. Let the liquid rest until the potato starch has settled (this will take a while). In the meantime, mix the batter with salt, mace, and peppermint to taste. Once the starch has settled, drain the water and add the starch to the batter. No eggs or flour! Fry in hot oil until crispy and serve with cold (!) apple or apricot compote.
