Potato and radish salad

Ingredients for 8 servings:

  • 1 ½ kg potatoes
  • 1 cucumber(s)
  • 1 bunch of radishes
  • 1 bunch of spring onions
  • 2 eggs
  • 2 tomatoes
  • 2 packs of ready-made salad dressing mix (Italian herbs)
  • 4 tbsp oil
  • 6 tbsp water

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

without meat and without mayonnaise

Boil and peel the potatoes, then cut into large cubes. Peel and dice the cucumber, and slice the radishes. Dice the tomatoes, finely slice the spring onion, and mix everything together. Hard-boil the eggs and cut them into eighths. Combine the ready-made mix with the oil and water and pour over the salad. Stir everything gently. Delicious for grilling.
