Potato and vegetable casserole with Parmesan

Ingredients for 4 servings:

  • 4 large potatoes
  • 1 can/n mushrooms
  • 1 can of corn
  • 2 tomatoes
  • 3 bell peppers, red, yellow, green
  • 1 large onion(s)
  • 2 spring onions
  • ¼ liter cream
  • 2 eggs
  • salt and pepper
  • Parmesan
  • nutmeg

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Place all the cut ingredients into a greased casserole dish. Whisk the eggs and cream with the spices and pour over the ingredients. Sprinkle with Parmesan cheese. Bake at 200°C for one hour.
