Potato and wild garlic strudel

Ingredients for 4 servings:

  • 600 g potatoes, raw, peeled
  • 1 large onion(s)
  • 140 g ham, raw
  • 2 egg yolks
  • 1 bunch of wild garlic
  • some nutmeg
  • some salt, pepper
  • 2 strudel sheets

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

Boil the potatoes until soft and mash (or press through a potato ricer). Lightly sauté the onions and raw ham. Finely chop the wild garlic. Add the onion and ham mixture to the potatoes, stir in the egg yolks, and finally fold in the wild garlic. Season with salt, pepper, and nutmeg. Spread the mixture onto the strudel sheets, roll them up tightly, and bake in the oven at 180°C for about 25 minutes. It goes well with meat or on its own with salad.
