Potato baskets filled with bacon and cheese

Ingredients for 2 servings:

  • 1 kg potatoes, floury
  • 100 g butter
  • 2 eggs
  • 100 g cheese, grated
  • e.g. salt and pepper
  • 1 pack of bacon, approx. 100 g
  • n. B. Cheese for garnishing

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 40 minutes; Total time approx. 3 hours 10 minutes

Peel the potatoes, preferably floury ones, and cook as if for mashed potatoes. Press the potatoes through a potato ricer. Mix the butter into the still warm potatoes. Cut the bacon into small pieces or use diced ones. Grate the cheese for garnishing. When the mixture has cooled slightly, add the eggs, grated cheese, salt, and pepper. Place the resulting batter into a piping bag fitted with a large star nozzle and pipe onto a baking sheet lined with baking paper. It’s best to start in the center and pipe outwards in a spiral pattern. When the biscuit is large enough, pipe a ring-shaped border to create a basket. Fill this basket with bacon and cheese and sprinkle with grated cheese. Of course, any other filling will work. Bake everything in a preheated oven at 200°C (top/bottom heat) for about 20 minutes on the middle rack.
