Hearty cheeseburger-style filled potatoes, ideal as a snack
Preheat the oven to 180°C (top/bottom heat). Wash and dry the raw potatoes, and place them in an ovenproof dish. Brush the potatoes with oil, sprinkle with salt, and place the dish in the oven for about 40 minutes, depending on the size of the potatoes. Cut off one end of each cooled potato to create a base. To scoop out a potato, place it on the base and remove the top end with a knife in a funnel shape. Then, using a small spoon, scoop out about 3/4 of the potato through the resulting hole, taking care not to break the base. For the filling, mix the ground beef with salt, pepper, garlic powder, and chili powder. Cut the cheddar into sticks about 6 cm long and 1.5 cm wide/deep. Roll each piece of cheddar into a thin patty of the ground beef mixture, place each roll in a scooped-out potato, and then wrap each stuffed potato completely with 1-3 strips of bacon. Bake the potatoes, side down, in the baking dish for 20 minutes. After the 20 minutes, brush the wrapped potatoes with BBQ sauce and then bake for another 30 minutes.
