Potato cakes with bacon

Ingredients for 4 servings:

  • 300 g potatoes
  • 3 rolls from the previous day
  • 100 g sour cream
  • 2 eggs
  • 1 onion(s)
  • 2 tbsp parsley, chopped
  • 100 g cheese (Gouda)
  • salt and pepper
  • nutmeg
  • 3 tbsp oil
  • 40 g bacon, diced
  • 75 g ricotta

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Boil the potatoes. Dice the bread rolls, whisk together the sour cream and eggs, and mix with the bread rolls. Chop the onion and parsley, grate the Gouda cheese, and add everything to the bread mixture. Mash the potatoes and mix with the prepared ingredients and the ricotta. Season the mixture with salt, pepper, and nutmeg, and form into flat patties. Heat the oil and fry the patties on both sides until golden brown. Remove from the pan and fry the bacon in the frying fat until crispy. Sprinkle the patties with the bacon and serve with a fresh salad.
