Potato-carrot-celery mash

Ingredients for 4 servings:

  • 400 g potatoes
  • 400 g carrot(s)
  • 400 g celery
  • 2 onions
  • 1 clove(s) garlic
  • 1 liter beef broth
  • 150 g diced ham
  • 2 bay leaves
  • 1 tbsp butter
  • 200 g sour cream
  • 1 tbsp mustard
  • salt and pepper
  • Parsley, chopped

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Peel and roughly dice the potatoes, carrots, celery, and onions. Chop the garlic. Simmer the vegetables with the diced ham and bay leaves in the beef broth until soft (about 25 minutes). Drain all of the broth and reserve it (it’s delicious). Fish out the bay leaves. Mash the vegetables with a hand masher (not too finely; some may remain chunky). Stir in the butter, sour cream, and mustard and season with salt and pepper. Sprinkle with the chopped parsley.
