Potato cheesecakes

Ingredients for 1 servings:

  • 1 small onion(s)
  • 3 large potatoes, peeled (about 450g)
  • 3 tbsp flour
  • 100 g cheese, grated, Asiago or mild Gouda
  • Olive oil, for frying
  • Salt and pepper, to taste

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the onion and coarsely grate it into a bowl using a grater. Peel the potatoes and coarsely grate them with the onion. Add three heaped tablespoons of flour and mix. Now add the cheese and stir in. Heat plenty of olive oil in a non-stick pan. Now add heaped tablespoons of the potato mixture to the pan. Flatten slightly and fry until golden brown on that side. The cakes should be about 8cm in diameter. Then turn them over and finish cooking until golden brown on that side. Drain slightly on a few layers of kitchen paper. If you like, you can add a little salt and pepper to taste. Then arrange on a plate or platter. They taste delicious served with a little sour cream or a dip. The batter makes about 10 cakes.
