Potato cookies

Ingredients for 4 servings:

  • 800 g potatoes, peeled
  • Salt
  • nutmeg
  • 2 tbsp potato flour (or cornstarch)
  • 3 eggs, including the yolk
  • potato flour
  • 2 tbsp butter

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Boil peeled potatoes in salted water until tender. Drain the water and place the lid on the hot stovetop for a moment to allow the steam to cool. Press the potatoes through a potato ricer or, alternatively, mash them with a fork and pass them through a sieve. Stir a little salt, nutmeg, and flour into the hot potato batter. Allow to cool. Sprinkle a little flour on a piece of baking paper. Place the dough on the ricer and form it into a roll. Cut slices from the roll and brown them well on both sides in butter. VARIATION: Mix a few cubes of ham and cheese into the potato batter or add herbs.
